Lasagna Soup in the pressure cooker

(Sorry that pic is not my best work 😆 but I was hungry)

Ingredients
4 Large zucchini
2 Lbs Ground Beef (or other ground meat. I love Force of Nature regenerative ground beef)
2 Cans of tomato sauce
2 Cups Chicken broth
3-4 Cloves Garlic
1 Onion
2 tsp Salt
1 tsp Pepper
2 tsp Oregano
4 tsp Fresh Parsley
2 Bay Leaves
1 cup Ricotta
Fresh Mozzarella

1. Slice zucchini into lasagna-thick slices. Cut into squares. 
2. Saute onion in your pressure cooker until transparent-ish. 
3. Add garlic towards the end. 
4. Add ground beef and salt, pepper, oregano, and half of the parsely. 
5. Brown the meat. 
6. Add in your tomato sauce, bay leaves, broth, and zucchini. 
7. Set to low pressure for 5 mins and release when done.
9. While that's cooking, chop your mozzarella into bits (as much as you'd like) and mix with your ricotta. Add the rest of your parsley.

When your soup is done, add to bowl and top with ricotta/mozzarella mixture. Take better pics than I did 🙂

Cheesy breakfast cups

I started doing this because I was tired of making eggs/sausage every day.

For 12 egg cups
6 Eggs
1 package of ground meat (I use 93/7 ground turkey)
1 tsp ground sage
1 tsp salt
1 tsp pepper
Red pepper (If you like your breakfast sausage spicy)
Mix ins (see below)
Garlic
Shredded Cheese
1/4 cup Sour Cream 

To make breakfast sausage, mix it all together and brown. Break up into bits. Set aside

Mix Ins
You can use pretty much whatever you like. This is what I use. Sometimes I use all of it. Sometimes I only use what I have on hand
Sweet peppers sliced 
Zucchini quartered and sliced
Garlic minced

Brown in a pan. Add garlic the last 30 seconds.
Let everything cool

Put your 6 eggs and 1/4 cup of sour cream in a mixing bowl and whisk. Add everything together. Fill up your muffin tray about 3/4 to half way. Add shredded cheese on top. 

Bake at 375 for 30 mins. 

Highly recommend using a silicone muffin tray.

Purely Elizabeth Ancient Grain Pancake/Waffle Mix

Not a recipe but am loving this. Full of good stuff. I usually have some protein before I eat mine, but I eat a full serving of mix (= 2-3 pancakes/waffles) and no spike (so far). And it's MUCH better than the Birch Benders mix. That stuff be grainy! :D
 
Ingredients: Almond Flour, Arrowroot Flour, Organic Coconut Milk Powder (Organic Coconut Milk, Organic Tapioca Maltodextrin, Organic Gum Acacia), Organic Teff Flour, Organic Buckwheat Flour, Organic Chia Seeds, Organic Tigernut Flour, Organic Hemp Seeds, Organic Flax Seeds, Leavening (Baking Soda, Monocalcium Phosphate Monohydrate), Sea Salt, Cinnamon.

WHOOP group for Veri?

Any other Veri/WHOOP users want to be in a WHOOP group? I never know where to post my random stuff. I hope this is the place!

I don't have too many WHOOP friends and being in a group motivates me. Would also love to discuss how your data overlaps and any cool findings you've had between WHOOP and Veri.

Mid-Day Squares

This isn't a recipe, so if it's not allowed, I will definitely remove. I just found this product and I looooooove them! No glucose spike and they fill me up if I need a quick snack and can't have a full meal for several hours. Pricey for sure but nice for an after-meal dessert.

Chia Pudding/Drink (just stating the obvious cliché metabolically healthy food)

I actually like to make mine into more of a drink so I'll use less chia to liquid ratio

(US measurements...sorry)

1ish cups milk (I love the Califia toasted coconut milk)
This obv doesn't matter a lot. It's just the base for the drink you're making
3tbl chia seeds
2 tsp "sweetener" (I use granulated Truvia)
1-2 tsp vanilla

I put it all in a shaker cup without the whisk and shake it and leave it in the fridge for 30 mins or so. Add some blueberries in and drink it. 

If you want something more pudding-like, add more chia OR let it sit overnight.
Add protein powder too, if you want!
